bobby:what's up, fellow home cooks? it's your boy, bobby, and today, my boo andi are going to make for you one of our awesome recipes, a finnish pancake. it's so easy to make. almost all the work is done in the blender,and the end result is what bakers call golden

if there's corners to cut, i will find them,and i will exploit them. hit that button, lady! all we're going to do is mix it to combine,and you don't have to worry about the glutens being overworked, because we're going to restthe batter for an hour and a half in the fridge, so we can either take a nap, or i can grabthe one i did earlier. all right? by the way, now would be a good time to preheatyour oven. dessi:to four hundred and thirty degrees. the batter is looking absolutely money.


now, the kicker in the recipe, as guy fieriwould say, is we're preheating the cast iron pan in the oven. now it's scorching hot. now i'm going to take about a tablespoon ofbutter. aw, sizzle, sizzle, baby! the reason we preheated the pan is, just likea dutch baby or german pancake, we want it to start cooking immediately. as soon as we put the batter in, it's goingto start caramelizing on the bottom, and it's going to puff up and get all big and puffyin the oven and delicious.


okay, so dessi, why don't you go ahead. just pour enough to cover the bottom. this is one of those recipes where less ismore. if you put too much, it's going to be a fatboy, and it's not going to rise up enough. that looks perfect. it's bubbling and wants to get in the oven,so i'm going to put it in the oven. dessi:it should take about fifteen minutes until it's golden brown and ... bobby:delicious.

i'm going to follow dessi with a little bitof lemon juice. this is, like, classical european, but youcan do nutella, or whatever you want, and this is like breakfast food. let's go on with our hands. dessi:let's do it. bobby:the cool thing is, we make this for dessert on the weekdays if we've got a hankering becauseit's so easy, and look at that, guys. it's tender. it's crispy.


it's got light pockets of air there. no more talking. dessi:that's right. bobby:in our pie holes. dessi:mmm. bobby:mmm! bobby:it's crispy on the bottom, tender on the inside, really light and airy, and a little bit oflemon juice and powdered sugar, that's all you need.
